Super Bean Burrito Review!

All right, time for another recipe review. Bonus, this one’s vegetarian!

Today I reviewed the super bean burritos from Mel’s Kitchen Cafe.

Changes I made: I took out the jalapeños (I haven’t been able to eat things that are too spicy since before I was pregnant and I am also super, super paranoid that I’ll handle a hot pepper like that and accidentally touch my eyes – I know, I’m weird), I used already minced dried garlic (someday I hope to get a garlic press but for now, I’ll have to stick with the stuff in the jar), I only used half the green onions called for because Nick has told me before that he’s not a fan (though I love them, so I left some in), and I used cheddar cheese instead of Monterey Jack (I actually love Monterey Jack cheese but I had some cheddar cheese already opened so I wanted to use that up first).

The verdict? I really liked them. They were quite tasty. I had to talk Nick into them though because he’s like “I don’t really like beans” but even he said they were “not bad.” I would mash the pinto beans a little bit more next time (I only half heartedly mashed them this time) and I’d like to try fresh garlic, but other than that, I loved them.

There was only one problem with them, in fact. Maybe you can tell from this picture.

I was so hungry I started eating it before I remembered I wanted a picture – oops!

Apparently, I can not roll burritos. I tried rolling it just like it said in the instructions and I just could not get it. All the filling kept oozing out so eventually I gave up and just ate it like it was a taco. Still tasted good! And I was going to try freezing them, but because I couldn’t get them rolled up like burritos should be, I gave up on that and just put the leftovers, unrolled, in the fridge. That will make some good lunches for me this week.

Recipe Review . . . Sort of

Okay, so, I tried to review a recipe. And I made it. And I can show you pictures and everything. But I sort of had a fail with it.

I attempted to make this Adult Grilled Cheese from A Turtle’s Life for Me except I don’t like pepperoni, so I was substituting chicken lunch meat instead. And I made it successfully, that was not the fail.

See? My sandwich, all ready for eating.

But as soon as I tasted the avocado, I knew something was wrong with it. You see, I don’t have a strong knowledge of cooking to draw from and avocados are a relatively new food to me. I’ve tried them and discovered I really, really like them. But something was wrong with this avocado. It was either too ripe or not ripe enough – I don’t even know what, but it was off. Soooo that really effected what I thought of the sandwich. Because my avocado was just all wrong. I ended up just peeling off that side of the sandwich and eating the chicken and mozzarella side like an open faced sandwich. Which was really good! So that part gets 5 stars – I might make it again.

So help me out here! Tell me how to fix my avocado! How do I tell if it’s ripe? I want avocado to be one to little guy’s first foods, but I don’t want to give him one that’s not ripe!

Recipe Review: Peanut Butter Baked Oatmeal from Lynn’s Kitchen Adventures

So, part of what I want to do with my re-styled blog is recipe reviews. Why? Because you see so many good looking things on the internet but sometimes they’re duds and sometimes they’re really hard, so this is my way of telling you what I’ve tried and what I like.

Currently, there is breakfast cooking in my oven. The first thing cooked in my new oven since we moved! Little guy cooperated and fell asleep so that I could cook it 😉 So the first recipe I’ll be doing in this series is Peanut Butter Baked Oatmeal from Lynn’s Kitchen Adventures. I’m very excited about it because I love peanut butter and because I’ve recently come to love baked oatmeals. It’s a new thing to me that I was introduced to at women’s Bible study and really loved it. So I’m trying this kind, even though I’ve never had a peanut butter one before.

And let me tell you – I am no cook! If this doesn’t turn out it will be due to one of two things. Thing number one it could be due to – I sort of guess on the measurements of things. You see, I have measuring cups and measuring spoons but all the markings that tell you what size they are are worn away. So I sort of line them up and tell which is bigger and smaller that way. But the thing is, I haven’t unpacked all my kitchen stuff yet and only have about half of them unpacked. So I was just sort of eyeballing it and guessing on some of them. (“I think this is my half teaspoon. I think.”) I desperately need a new set!

Second of all, I kind of maybe put too much vanilla in it. I tipped it a little too far and a bunch splashed in. Whoops. Luckily I did it sort of at the beginning so there wasn’t too much in there already but I’m not sure how that will make it turn out.

So it’s currently cooking.

My thoughts? I really like it. It’s different from the fruit based ones I’ve had before and it definitely needs a glass of milk with it (which my mom would love – she loves me eating things that make me want milk). I don’t know what kind of peanut butter Lynn used, but I used crunchy and I loved the extra texture it added to it. It’s super filling. And it was super easy. The only downside? I can definitely tell that I did add too much vanilla. Whoops.
